Easiest mini quiches you'll ever make!

Super easy cheese and spinach recipe!⠀

Makes 12 mini egg cups.⠀

Ingredients: ⠀

🍃 2x large eggs⠀

🍃 1 Tbsp milk⠀

🍃 1 tsp butter (we have used nutalex)⠀

🍃 1/2 cup finely chopped spinach⠀

🍃 1 Tbsp grated tasty cheese⠀

🍃 1 eye bacon diced- optional.⠀

🍃 3x slices wholemeal bread⠀

🍃 Cracked pepper to taste. ⠀

Method: ⠀

1. Preheat oven 180°C and prepare mini muffin tray with a light spray of olive oil. ⠀

2. Remove crusts from bread and use a rolling pin to gently flatten into a compressed pastry like square. ⠀

3. Cut each piece into quarters. ⠀

4. Take one square and line one muffin cup, pressing the bread into shape. ⠀

5. In a glass measuring jug or bowl, combine the rest of the ingredients. Mix well. ⠀

6. Take mixture and pour into bread cups. We advise to leave 2-3mm from the top to allow egg rising.⠀

7. Place in oven for 15 minutes or until egg is cooked through and bread is golden. ⠀

🍃 These little guys are very versatile, they can be served at breakfast, lunch or dinner. Even as great mid morning or afternoon snack! ⠀

🍃 For a light meal serve with a side salad or steamed veggies!
